1 cup whole wheat flour (or flour alternative)
1 cup white pastry flour (or flour alternative)
1 tbsp baking powder
1/2 cup sugar
6 dates, chopped
2 medium sized organic carrots, shredded
3/4 cup unsweetened organic apple sauce
1/3 cup canola oil
1 tbsp vanilla extract
In a medium bowl combine flours, baking powder and sugar.
Stir in dates, carrots, applesauce, eggs, canola oil and vanilla extract.
Bake for 20-25 minutes or until tops are golden brown.
